5c unpacked mixed greens2 large carrots, shredded or peeled into ribbons8 rice paper wraps Prepare greens and carrots. Dressing:2 T peanut butter1 1/2 t maple syrup1 1/2 t apple cider vinegar1/2 t freshly grated gingerpinch of salt and pepper to taste1/4-1/2c water, to achieve desired consistencypinch of red hot pepper flakes (optional)Mix all of the above to create a well blended dressing. Warm up to soften the peanut butter, if needed. You want the dressing to be thick enough to stick to the greens but thin enough to coat well.Once all of the above is prepared, toss greens & carrots, to coat to create filling mixtureFollow rice paper wrapper direction - soak for 20-40 seconds in warm water in a large shallow bowl to soften (I like to use a pie plate). Load up with filling mixture, and wrap.
