Toasted Shredded Coconut, 1.5 cupsGround Flaxseed Meal, 0.5 cupRolled Oats, 2 cupsChia Seeds 0.5 cupSliced Almonds, 1 cupGoji Berries, 2 tbspCacao Nibs, 0.25 cupHoney, 0.5 cupPeanut Butter, 1.5 cupsSunflower Seeds, 0.5 cupChocolate Chips, 0.33 cup
Toast coconut at 325 degrees for 5-10 minutes, then mix with oats, ground flaxseed meal, almonds, chia seeds, goji berries and cacao nibs.
After mixing dry goods thoroughly, add honey and peanut butter and mix well. This mixture may still be quite warm from the coconut, so let cool for a little while until trying to form into balls.
Grind the sunflower seeds and chocolate chips into power and set in a bowl in order to roll the balls. Have a large tupperware container and wax paper ready to store the balls.
Form small balls by squishing the mixture in one hand, then roll in the powder to coat. Place in the tupperware, using wax paper to separate layers as necessary.
Serving Size: makes 48 balls
