Ingredients
1 egg2 egg whites2 corn tortillas1 t smart balancesalt to taste
Directions
Lightly toast corn tortillas, tear into bite-size pieces and set aside. Blend eggs together well; add tortillas. Let sit for a few minutes.

Heat smart balance in pan and cook egg/tortilla mixture until just set.

Season to taste.
