Chicken Pad Thai

Ingredients
2 (8-ounce) boneless, skinless, chicken breasts2 tablespoons peanut oil, plus more for brushingSalt and freshly ground pepper2 shallots, finely chopped2 cloves garlic, finely chopped1 tablespoon ancho chili powderOJ 4 oz and lime juice combined1/4 cup rice vinegar2 tablespoons fish sauce2 tablespoons brown sugar1/4 cup creamy peanut butter1 pound Thai rice noodles, soaked in hot water for 15 minutes and drained
Directions
Follow directions for rice noodles while prepping food.

Grill the chicken for 4 minutes per side in grill pan or regular skillet. Remove, let sit (rest) and cut into thin slices.

Add 2 TBsp of peanut oil to skillet, heat oil and add the shallots and garlic and cook until soft. Add the ancho powder and cook for 10 seconds. Add the OJ/lime mixture, vinegar, fish sauce, brown sugar, and peanut butter and bring to a boil. Add cooked rice noodles and sliced chicken to pan and toss together.
