Passover-Gluten Free Cupcakes

Ingredients
4 eggs1½ cups sugar1 cup oil(optional: ¾ cup ground almonds (or walnuts)--not figured into calorie count)1 cup potato starch1 teaspoon salt1 teaspoon baking powder1 T. vanilla Mix well & bake in 9 x 13 pan at 350 degrees for 1 hour (or bake in cupcake tins til toothpick comes out clean--about 35 min.)
Directions
Mix well and bake for about an hour at 350. When toothpick comes out clean, it's done.
