Sweet Potato and Chicken Hash

1 large sweet potato, cubed1/2 medium yellow onion, chopped1/2 green bell pepper, chopped1 cup fresh spinach4 ounces chicken breast, cubed (pre-cooked)1/2 cup Rotel with green chiles1 tsp. coconut oil (or olive oil)1 clove of garlic2 large eggsSalt and Pepper to tasteOptional spices:-Paprika-Cumin-Garlic -Minced onion
Wash, dice and boil sweet potato for about 8 minutes until cubes are fork tender. Drain and set aside. Add coconut oil to pan and saute onion and bell pepper in garlic. When onions are almost cooked through, add spinach and sweat it out. Next, add sweet potato, rotel and chicken and cook until all is browned nicely. Crack 2 eggs on top of mixture and cook until sunny side up (or your preference). Serve immediately
