OK Ham-noodle Cassarole

2 cups cubed ham1/2 pkg (12-oz) flat noodles1 c 1% cottage cheese3 oz reduced-fat cheddar cheese1 pkg (16 oz) frozen stir-fry vegetables, or any. 1 medium onion1 large clove garlic1T olive oil.1/4 cup grated part-skim mozzarella cheese.
Put water on to boil for the noodles.
Sautee the onion and garlic in the olive oil. Add frozen vegetables to thaw them.
Mix everything except the mozzarella in a bowl, including the noodles when cooked (and drained.)
Put the mixture in a flat casserole, or 2 if needed; sprinkle a little mozzarella on top.
Bake covered at 350 degrees for 30 minutes.
Serving Size: makes 8 servings each 1 1/2 cup
