Ingredients
1 1/2 cup whole wheat flour1 1/2 cup ground flaxseed3/4 cup brown sugar1 tbs baking powder3/4 tsp nutmeg1 1/2 tsp cinnamon2 cups milk (1%)1 egg
Directions
Pre-heat oven to 350. Mix all ingredients, stir until well mixed. Spray muffin pan iwth cooking spray or use pan liners. Fill with batter until 3/4 full and bake for 25 - 30 minutes. Makes 12 large or 18 small muffins. 119 calories per serving for 18 muffins. 179 calories per if you make 12 large

    I made a vegan version by using an egg substitute and they turned out great. Nice texture and density, moist and not too sweet. It is a perfect basic muffin that will be easy to jazz up in any variety of ways -- all while incorporating more ground flaxseed into the diet. - 5/28/09
