Red Quinoa Baby Spinach Salad

Ingredients
100 mls red quinoa, approx 1/2 cup before cooking2 c gently packed raw baby spinach 1 c cherry tomatoes, halved2/3 c diced cucumber, not peeled1 green onion, thinly sliced2 Tbsp lime juice, approx 1 lime1/2 tsp cuminSalt and pepper to taste
Directions
Prepare quinoa; rinse for 15 minutes with generous amount of water, strain, then bring to boil in water (twice the amount as quinoa) then simmer 15-20 minutes until water is absorbed. Cool in fridge OR rinse gently in cold water if you don't feel like waiting.
Prepare and toss remaining ingredients then add cooled quinoa.
