-3 pounds of frozen, boneless, skinless chicken tenders or about 3 pounds of boneless, skinless chicken breasts. Chopped into 1 in cubes-1.5 Cups of Fresh Salsa Verde. (Find in your grocer's deli section or at a farmers market, or make your own!) -Two chicken Bullion Cubes-3 cups (about 4 cans) of white kidney beans (Cannellini also works well) drained and rinsed-24 OZ of Hominy, drained and rinsed-1/2 cup of yellow cornmeal-Cumin to taste
Boil chicken until cooked. While chicken is boiling drain and rinse the beans and hominy. When chicken is cooked through add beans, hominy and bullion cubes, reducing heat and simmering for about 10 minutes. Add remaining ingredients and simmer, seasoning to taste with cumin for another 10 minutes
