Black Bean and Sweet Potato Burrito

Ingredients
1 large sweet potato2 cups black beans1 cup onions, chopped1 clove garlic, chopped1 tsp lime juice1 tsp coriander powder1 tbsp red chile powder1 tsp garlic powder1 tsp salt8 flour tortillas1 tbsp olive oil1 roma tomato
Directions
Peel and dice the sweet potato. In a large pan, add sweet potato with enough water to cover. Over medium heat, bring water to a simmer. Cover and let cook until sweet potato is fork-tender. Drain and set aside.

In the same pan, heat up 1 tbsp olive oil. Add onions and garlic and sautee until onions are clear and tender. Add the tomato and sweet potato, slightly mashing as you stir so there are some mashed and some intact pieces. Stir in black beans, spices, and lime juice. Place in tortilla shells and serve with toppings of your choice.
