1 Medium Sized Red Bell Pepper1 Avocado2 Medium Lemons, Juiced (approximately 2 ounces)1 Tablespoon of Olive OilSalt and pepper to taste
Chop the peppers into pieces and process in the food processor. Next, dice the avocado flesh and put it into the processor. Add the lemon before pulsing to preserve the avocado. Add the oil to mixture and blend until smooth. Add salt and pepper to taste.
Serving Size: Makes about 6 3-Tablespoon Servings.
