Low Carb Mexican Casserole

Cauliflower, raw, 1 head, large (6-7" dia) Onions, raw, .5 cup, chopped 1 Med. Green Bell Pepper, .5 serving *Red Bell Pepper (Peppers, sweet, red, raw) *Cumin , 1 tsp Chili powder, 1 tsp Tomato, grape , 6 sliced (about 2 oz )Cheddar Cheese, Kroger shredded Sharp Cheddar, 1.5 cup
Pan roast on medium heat, stirring every few minutes, onion, peppers. Set aside...add cumin, chili powder and whatever else you want in the spices.
"RICE" cauliflower until it resembles rice in processor. Cook in micro about 3 minutes. Add tomatoes, and 1 cup of the cheese and the sliced tomatoes.
Mix all together and place in 7 x 11" casserole that has been sprayed with cooking spray. top with rest of shredded cheddar.
Bake at 350 about 30 minutes.
