Holiday Hash Fritata

2 oz Holiday luncheon meat , choopped1/2 md yellow onion, chopped1/2 bell pepper, any colour, chopped1/2 C mushrooms, chopped1 C hash browned potatoes1 C egg substitute1/2 t cumin1 t parsley1 t chives1 T grainy mustard3/4 C mexicali cheese, grated
Chop luncheon meat, onion, pepper an mushrooms. Cook in non-stick frying pan just until heated through. Add hash browns and cook until hashbrowns just begin to brown.
Transfer to a pie plate sprayed with non-stick cooking spray. Combine mustard, spices and egg substitute. Stir well then pour over vegetable mixture.
Bake in 350 oven for 30 minutes. Remove from oven. Sprinkle cheese over top. Switch oven to broil & cook another 10 minutes.
Slice and serve.
Serving Size: serves 2 for a whole meal, can easily be stretched to 4.
