Fresh Chicken Salad

Ingredients
1 Whole chicken, rinced and patted dry32 oz. chicken stock2-3 cloves of garlic, smashed4-5 tbsp of Miracle Whip light2 stalks of celery, diced1 cup of grapes (I use red), halvedsalt & pepper to taste
Directions
I find it easiest just to place the whole chicken in a slow cooker for several hours. Cover it with the stock and add garlic. Once it is done and cooled, you can remove the skin and bones and the meat shreds very easily. You can save the liquid for soup or another recipe.
Or, you can skip all this by using a couple of cans chicken.
Once the chicken is shredded, add the Miracle Whip, celery, grapes and seasonings and mix well.
You may need to adjust the amounts of other ingredients depending on the size of the chicken.
Using an average size chicken, you will get approx. 6 servings.
