Momritz - English Muffins (start in bread machine)

Ingredients
1 1/4 C milk 2 Tbsp canola oil 2 C whole wheat flour 1 C wheat bread flour 1/3 C cracked wheat (bulgur)1 Tbsp brown sugar 3/4 tsp salt 1 tsp active yeast
Directions
Place ingredients in order into bread machine pan
Run dough cycle
turn out onto floured surface cover and rest 10 minutes
roll to less than 1/2 inch
cut 3-4 inch diameter muffins
dip both sides of each muffin in corn meal (use a bit of water if it's not sticking)
cover and let rise 30 minutes in warm place
cook muffins in skillet ( I use my big electric griddle) at 325 25-30 minutes flipping every few minutes until muffin sounds hallow.

Makes 15 3 inch muffins.
