Vegan Gluten Free Tabouli Lettuce Wraps

Ingredients
Romaine Lettuce 2 medium heads (inner spears)Chopped Parsley, 2 cupQuinoa, 1 cup Dried, then cooked and cooledCherry Tomatoes quartered, Fresh (1.5-2 cups)Fresh Chives or Scallions, 4 tbsp chopped Cucumber (peeled), 1 medium choppedExtra Virgin Olive Oil, 1/4 cupSea Salt, 1 tsp Pepper, black, to tasteHummus, 1/2 cup
Directions
Soak 1 cup quinoa in 1.25 cups water overnight in pot
Heat on high, once boiling turn to low, cover and simmer for 10 minutes
Fluff, Chill

Mix all ingredients, besides the lettuce spears
Place in Bowl to serve along plain lettuce spears
Add about 2 Tbsp of Tabouleh mixture to lettuce spear, enjoy


Serving Size: Makes 20-25 (serving size is about 3 spears)
