NM Chocolate Chip Cookie Recipe

Ingredients
1/2 cup unsalted butter, softened1 cup brown sugar3 tablespoons granulated sugar1 egg2 teaspoons vanilla extract1/2 teaspoon baking soda1/2 teaspoon baking powder1/2 teaspoon salt1-3/4 cups flour1-1/2 teaspoons instant espresso powder, slightly crushed8 ounces semisweet chocolate chips
Directions
1. Cream the butter with the sugars until fluffy.
2. Beat in the egg and the vanilla extract.
3. Combine the dry ingredients and beat into the butter mixture. Stir in the chocolate chips.
4. Drop by large spoonfuls onto a greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes, or 10 to 12 minutes for a crispier cookie. Makes 24 cookies.

    I was able to squeeze over 40 cookies out of this recipe by dropping them from the tradtional 'tea spoon' (not tsp), making each cookie about 2" in diameter. A little more reasonable size for a healthy diet. I also substituted Stevia for the granulated sugar, bringing the calories down a little more - 8/19/08
