Gluten Free Swerve Chocolate Chip Loaf Cake

Corn Starch, .5 cup Tapioca Starch, .5 cupXanthan Gum, 1 tsp Baking Powder, 1.5 tsp Kosher Salt, .5 tsp Baking Soda, .5 tsp Swerve All Natural Sweetener, 36 tsp (3/4 cup)Butter, unsalted, 6 tbsp Yogurt - 0%, plain, 8 oz Large Brown Egg, 2 serving Semi-Sweet Chocolate Chips, 5 tbspRice flour, white, .75 cupPotato Starch, 6 tbsp
Preheat oven to 325F degrees.
Mix all the dry ingredients except chocolate chips in a stand mixing bowl. Add in butter, eggs, and yogurt. Batter will be really thick. Add in chocolate chips, mixing with a fork. Scrape batter into coated baking pan (loaf) and with a wet spatula smooth the top and edges. For a split down the center, use a knife about 1/4 inch deep. Place pan in center of oven and bake for 60 minutes or until golden brown on top and toothpick comes out clean. Remove from oven and let cool before slicing.
Serving Size: Makes 1 Loaf (approx 16 slices)
