Mimi Meatloaves

Ingredients
2 beaten eggs3/4 c. milk1 c. oatmeal or dry bread crumbs1/2 c. chopped sweet onion2 T. snipped fresh parsley or equivalent dry1 tsp. salt1/2 tsp. dried sage, basin, or oregano1 lb. ground beaf1/2 c. barbecue sauce
Directions
Combine eggs and milk; stir in oatmeal, onion, parsley, salt, oregano and 1/8 tsp. black pepper. Add meat and m ix well. Spoon mixture into 6-muffin pan. Bake in 350 degree oven for 40 minutes or until internal temp is 160 degrees. Spoon off fat and spread top of each mini meatloaf with barbecue sauce. Bake for 5-10 minutes more. Let stand 5 minutes before serving.

Serving Size: Makes 6 mini meatloaves (use large muffin tin)
