Summer Rolls with Fresh Fruit Salsa

Ingredients
Summer Rolls:8 oz. Light Cream Cheese1 tsp. dill weed, dried1/2 tsp. minced fresh garlic2 T. finely chopped kale2 T. finely chopped fresh cilantro2 T. finely chopped pecans1/2 cup grated Gruyere cheese1/4 cup diced fresh mango3 8" tortillas3/8 cup finely chopped kale3 T. finely chopped cilantroFresh Fruit Salsa:1 cup diced fresh mango1/4 cup diced fresh strawberries1/4 cup diced fresh pineapple3 T. finely chopped kale3 T. finely chopped cilantro5 T. diced red onion
Directions
1. In a mixing bowl, combine the softened cream cheese, dill, garlic, 2 tablespoons minced kale, cilantro, and pecans, and the grated cheese. Stir well. Add the 1/4 cup diced mango and mix in.
2. Divide the mixture between the 3 tortillas and spread to nearly the edge of the tortillas.
3. Sprinkle with 2 tablespoons of chopped kale and 1 tablespoon of chopped cilantro on each tortilla.
4. Roll up tightly and wrap in plastic wrap. Refrigerate. Cut as desired to serve.
5. In a separate mixing bowl, toss together the diced mango, diced strawberry, diced pineapple, chopped kale, cilantro, and red onion.
6. To serve, place desired cut pieces of rolls on serving tray with salsa on the side.
7. Makes approximately 6 servings.
