Zucchini Artichoke Quinoa Salad

Ingredients
1/2 cup uncooked quinoa2 zucchini, chopped1 cups artichoke hearts, chopped1/4 cup red onion, chopped10 green olives10 black olives1 cup fresh spinach, choppedExtra Virgin Olive OilSea Salt
Directions
Cook quinoa as directed. Let cool. Chop vegetables and place in large bowl. Add quinoa & toss with olive oil. Salt to taste
