Dark Spice Cake

¼ cup canola oil¼ cup fancy molasses⅔ cup demerara sugar (or dark brown sugar)1 tbsp fresh grated ginger1 tbsp cinnamon1 tsp allspice½ tsp cloves½ tsp salt1 cup (boxed) unsweetened coconut or almond milk1 tbsp lemon juice½ cup sorghum flour½ cup quinoa flour½ cup brown rice flour¼ cup tapioca starch½ tsp guar gum1/3 cup gluten-free oats3 tbsp ground flaxseed2 tbsp whole flaxseed1 tsp baking soda¼ cup dark raisins (optional)
Preheat the oven to 350F and grease a 9” pan.
In a bowl, whisk together the oil, molasses, sugar, ginger, cinnamon, allspice, cloves, salt, coconut milk and lemon juice.
Add the flours, starch, guar gum, oats, flax and baking soda, mix well.
Mix in raisins, if using.
Bake for 45 minutes. Cool completely in the pan before turning out.
This is better the day after!
