Berry Berry Oatmeal Protein Breakfast Bars

2 eggs2 tsp vanilla extract2 cups unsweetened applesauce1 banana, mashed5 cups old fashion rolled oats2 Tbs. PB2 powder1/4 cup flaxseed meal1 Tbs. ground cinnamon3 Tsp. baking powder1/4 cup dark chocolate morsels1 scoop vanilla protein powder2 cups almond milk1 cup blueberries1 cup strawberries, sliced
Preheat oven to 350 degrees.Combine eggs, vanilla extract, unsweetened applesauce and mashed banana in a bowl and stir until well combined. In a separate bowl combine rolled oats, PB2 powder, flaxseed meal, ground cinnamon, baking powder and chocolate morsels and stir until well combined. Add wet mixture to dry mixture and stir until all dried ingredients are moistened. Add scoop of protein powder to almond milk and stir until powder is blended. Add milk to mixture stir until combined. Add blueberries and strawberries and stir gently until fruit is incorporated in mixture. Use muffin cups or a bar pan to scoop your batter into. I used a 12 spaced bar pan and made 24 bars filling the cups almost all the way full. Bake at 350 degrees for 30 minutes or until a toothpick inserted comes out clean.
