Eileen's Fiesta Rice with Beef & Beans

Ingredients
1 lb Lean Ground Beef (93% - 96%)1 15 oz can Black Beans (or cook your own)1 15 oz can Whole Kernel Corn (drained)1 15 oz can Tomato Sauce (plain)2 10 oz cans Ro-Tel Tomatoes & Chilies (any heat)1 package McCormick Taco Seasoning Mix (Red. Sodium)2 cups Chicken Stock (box or homemade)1 cup Parboiled (Converted) Long Grain Rice
Directions
This is my take on a recipe that came from another website. I prefer to use 93 to 96% lean ground beef. You can also use a pound of chicken breast, cut into bite sized pieces. I prepare this in a standard Crock Pot. You simply deposit all ingredients EXCEPT THE RICE into the pot, set on Low, and leave for 6-7 hours. When it is ready, add 1 cup of converted (parboiled) rice, stir, cover, and let cook an additional 30 minutes. Turn off crock pot, stir again, let sit for a few minutes and rice will absorb excess liquid. Makes 6 GENEROUS portions, or more, smaller portions.
