Lemon Yogurt Fridge Pudding

Ingredients
3 Lemons (skin grated and juiced)20 g Plain gelatin1000 ml Plain low-fat yogurt250 ml Creamed cottage cheese100 ml cream8 tsp Xylitol
Directions
Add lemon juice, lemon rind and xylitol to saucepan and heat on gentle heat, to slightly hot, not boiling.
Whisk till xylitol is dissolved.
Add gelatin and set aside.
In another bowl, add yogurt, cottage cheese and cream.
Whisk till all is combined and smooth.
Add cooled gelatin mix and whisk till combined.
Pour into glass container, cover with cling wrap and put into fridge.
Let it refrigerate up to four hours or until set.
