1 Green Bell Pepper, large, chopped1 Tomato, medium, chopped1 Yellow onion, small-medium, chopped1tsp Garlic, minced2oz Mushrooms, sliced3oz Chicken breast strips (Tyson Grilled & Ready), chopped1/4c water, dividedpinch saltcracked black pepper, to taste (generally the spicier you make it, the longer you'll feel full)Italian Seasoning, to tasteNonstick cooking spray if desired
Spray 8" skillet with nonstick spray - if desired
Add chicken and half the water, cook one minute over medium-high heat (to extract juices), remove from pan
Cook onion one minute (to absorb juices), add mushroom and garlic, cook three minutes, add bell pepper, tomato, water, salt, pepper and Italian seasoning, stir, cover and simmer on medium for three minutes, add chicken and stir, cover and simmer another two minutes or until veggies are desired firmness.
Serving Size: makes 1 very satisfying plate
