Chocolate Bread

Ingredients
2-1/4 cups flour3/4 cup sugar1 cup Splenda3/4 cup unsweetened cocoa powder1 1/2 tsp baking powder1/2 tsp salt1-1/2 cups unsweetened almond milk1/2 cup canola oil1/2 cup unsweetened apple sauce6 large egg whites2 tsp vanilla extract1 Tbsp instant espresso granules dissolved in 1 Tbsp hot water1-1/4 cups semisweet chocolate chips, plus 2 tsp flour
Directions
1. Preheat oven to 325 degrees F.

2. Spray (2) 9" x 5" loaf pans with nonstick cooking spray and line with parchment paper & spray as well.

3. In a large bowl whisk together the flour, sugar, Splenda, cocoa, baking powder, and salt. Using an electric mixer, beat in the milk, oil, egg whites, vanilla and espresso.

4. Beat on medium speed with an electric mixer until combined. In a medium bowl, toss the chocolate chips with 2 Tbsp flour. Spoon the batter evenly into the prepared pans & add chips to mixture.

5. Bake until a wooden pick inserted in center comes out clean, about 1 hr 15 mins. Allow to cool in the pans for 20 mins. Remove the bread from the pans and cool completely on a wire rack.

Each loaf should be sliced into 12 servings
