Fae's First Apple Kolaches with sourdough

2 cups sourdough starter1 cup warm milk 105 F1/2 cup sugar1/2 cup melted butter2 tsp salt2 large eggs5 cups flour1/2 cup sugar1 cup unsweetened applesauce2 TBS cornstarch
Mix starter with warm milk and 1/2 cup sugar, then add salt and eggs and pour melted butter slowly to incorporate without cooking/overheating batter. Add flour 1/2 cup at a time and knead the last cup in by hand. Allow dough to rest covered and rise 30 minutes.
Mix applesauce, sugar, and cornstarch and allow to sit while working dough into kolaches.
Divide dough into 32 golf ball sized spheres and press middles down to make indentation for filling. Fill kolaches and let rise for 1 hour. Bake at 400 for 18-20 minutes.
Serving Size: Makes 32 kolaches
