My Mac and Cheese - Lightened Up, but still DELICIOUS

8 oz uncooked elbow pasta2.25 c skim milk2 c Sargento Cheddar/Jack 2% shredded cheese0.25 c white flour1 tsp salt0.25 tsp pepper0.5 tsp dry mustard
Cook noodles, drain
Melt butter.
Add flour, salt, pepper, mustard to make roux
Remove from heat and slowly add milk, stirring till smooth.
Over medium heat, constantly stir milk until thickens - about 10min
Remove from heat and stir in cheese till melted
Add cooked macaroni noodles
