Spicy Sriracha Chicken

Ingredients
Chicken Breast - about 2 pounds, cut into bit sized piecesHoney, 1/4 cupSriracha Hot Sauce, 1/2 cupShallots, 2 small or 1 largeJuice from 1 limeCilantro, a bunch, choppedQuinoa, cooked per package instructions.
Directions
Using coconut oil, sweat shallots in a large skillet or pot. Add the chicken and brown. Mix the honey, lime juice and sriracha together. Add the mixture to the chicken. Simmer uncovered about 10 minutes or until the chicken is cooked through. You can also keep simmering until the sauce is a thicker consistency. Add chopped cilantro at the end along with any spices such as garlic salt and sweet curry powder for an extra kick.

Serve over a half cup of quinoa per serving.
