Turkey Chili - Lean with Veggies

3 stalks celery1 each large green, red and yellow pepper2 cups mushrooms1 large onion (Vidalia if possible)2 large cans kidney beans, rinsed and drained1 can Heinz brown beans in tomato sauce1 can Heinz brown beans in Maple1 pound lean ground turkey1 large can chopped tomatoes1 small can tomato paste1/4 cup ketchup (or more, to taste)Frank's Hot Sauce to taste (we use lots)Cayenne pepper to taste4 tablespoons chili powder (we use lots!)
For slow cooker: saute the onion and ground turkey. Throw everything in your slow cooker and let it cook - can cook for up to 8 hours.
For stove top: saute the onion until clear, then add the mushrooms. Saute another 5 minutes, add all remaining veggies and ground turkey and saute until the meat is thoroughly cooked, stirring constantly. Add all remaining ingredients and if necessary, top up with water. Season as desired and let simmer for 1/2 hour or longer.
Serving Size: Makes 12 - 1 cup portions
