Banana Pancakes

1-1/2 cups all purpose flour, spooned into measuring cup and leveled off2 Tbsp sugar2-1/2 tsp baking powder1/2 tsp salt1 small-medium overripe banana1 cup plus 2 Tbsp low fat milk2 large eggs1/2 tsp vanilla extract3 Tbsp melted butter
In a medium bowl mix together flour, sugar, baking powder, and salt.
In small bowl mash the banana with a fork until almost smooth. Whisk in eggs then add milk and vanilla and whisk until blended. Pour banana and melted butter into flour mixture. Mix together gently until just blended; do not over mix! The batter will be thick and lumpy.
Heat griddle, spray with non stick cooking spray. Drop batter by 1/4 cupfuls onto the griddle. Cook and enjoy!
Serving Size: Makes 12 4 inch round pancakes
