Mint Sauce

Ingredients
Fresh peppermint leave, approximately 20 (1 handful)1 tsp sugar1 cup malt vinegar
Directions
Very finely chop the peppermint leaves. Sprinkle over some of the sugar to help draw out the oils and chop in even finer.
Place this in a small glass along with the remaining sugar. Pour over the vinegar and stir.

Stir again as you are spooning it onto your lamb to circulate the mint.
