24 oz cottage cheese, small curd fat free20 oz sharp cheddar shredded19 oz enchilada sauce16 oz green onion, chopped12 soft corn tortillas10 oz green chiles, drained 7 oz black olives, sliced and drained
- combine cottage cheese, green chiles, half the cheddar cheese and half the green onion
- spread 1/2 cup enchilada sauce on the bottom of a large glass baking dish
- layer 6 tortillas on top of the sauce
- spread cheese filling evenly across the tortillas
- layer remaining 6 tortillas across pan
- spread remaining enchilada sauce evenly over the tortillas
- sprinkle remaining cheddar cheese and green onion and the black olives over the top
- bake 45 minutes at 350 degrees
