Yummy Easy Potato & Pasta Goulash

1 Onion (spanish or red is sweeter)2 Green Peppers3 Cloves of Garlic1 Can of Tomato Puree or 1 can of diced tomatoes5 Potatoes (peeled and cubed - on the larger side)250 Grams of Pasta (any type you like shells work best)2 Litre of Chicken Liquid Stock3 Tablespoons of Paprika1 teaspoon of Cayenne Pepper2 Tablespoons of olive oilSalt if required
Heat oil in a pot once hot reduce the heat and add the finely chopped onion (spanish or red onions are sweeter), finely chopped green peppers and crushed garlic. Don't brown them just soften. Then add the paprika and cayenne pepper - stir for a few minutes. Then at the pureed tomatoes, and chicken stock and then bring to the boil. Peel and cube the potatoes and add to the boiling pot. Reduce the heat and let simmer until the potatoes can be skewed with a fork or knife. Add the pasta and serve once the pasta has cooked al dente. Add salt if required. This makes 12.5 1-cup servings.
This is even better then next day after it has thickened.
