Multigrain Cinnamon-Apple-Nut Ceral

1 cup whole grain quinoa1 cup spelt flakes1 cup whole grain, old-fashioned oats4 Tbsp yellow corn meal (whole grain)2 Tbsp flax seed meal1 cup non-sweetened applesauce1/2 cup chopped walnuts1 Tbsp cinnamon6 cups water (more if needed)
Combine quinoa and 5 cups water. Boil about 8 minutes until starting to turn translucent on the edges. Combine flax seed and corn meal with one cup cold water and let soak. Add all other grains, including cornmeal mixture, to pot and boil another three minutes. If mixture becomes too thick, add more water. Remove from heat. Add apple sauce and cinnamon. Stir, and serve!
