Carribean Pan Seared Chicken with Potato Casserole

Ingredients
Ingredients:*Potato, raw, 9 medium (2-1/4" to 3-1/4" dia.)(remove)*Dried Parsley, 1 tbsp(remove)*Dried Basil, .25 tsp(remove)*MORTON Sea Salt, Fine Salt, 0.15 tsp(remove)*Wyler's Chicken Boullion Cubes, 2 serving(remove)*1 med yellow onion, 1 serving(remove)*Pepper, yellow, raw, 1oz, 28gr, (.25 of med pepper), 28 gram(remove)*Bell peppers (sweet mini peppers,1 serv.=3 peppers, Dolcebaby, Aldi's), 1 serving(remove)*Kroger Chicken Frozen Chicken Breast (1 Breast), 2 serving(remove)Curry powder, 1 tbsp(remove)*Caribbean Jerk Seasoning, 1 tbsp(remove)*Cooking Spray, Pam Cooking Spray, 27 gram(remove)
Directions
Chicken prep: Take the boneless, skinless chicken breast and spray with Pam. Generously sprinkle curry powder and jerk seasoning. Spray a non-stick pan with Pam. On high heat sear both sides of the chicken. Remove chicken and cut into large cubes. Spray a little more Pam and return to the pan to finish cooking.

In a casserole dish, layer potatoes, sliced medium, sliced onion, appx. 3/4 squares of peppers. Sprinkle salt to taste over the mixture. Sprinkle jerk seasoning (salt free), and a small amount of curry powder over the potatoes, top with parsley and basil. Take 2 cubes of chicken bouillion and dissolve in one cup of water. Pour over mixture and cover in aluminum foil. Place in oven at 300 degrees for 1 and a 1/4 hours.
