Flourless Banana Pancakes

Ingredients
1 large banana*2 eggs½ teaspoon vanilla½ teaspoon baking powder, optional1 teaspoon cinnamon, optional
Directions
1. Mash the banana pretty well. Combine the mashed banana with the eggs, and vanilla. If desired you can add baking powder and cinnamon.
2. Heat a griddle low to medium and spray with the nonstick cooking oil.
3. Using a ladle spoon about 3” of the batter on the hot griddle for each pancake. Wait about 30 seconds to 1 minute and flip the pancakes.
4. Re-spray the griddle between each set of pancakes.
5. If desired, top with a little butter or peanut butter or any other type of nut butter.
6. Drizzle with a little syrup or agave or honey or any other liquid sweetener.

Serving Size: Makes six small pancakes that an easily serve one.
