Avocado and Feta

Ingredients
2 slices of pumpernickle bread (you can use another whole grain if you'd like)1 whole avocado, peeled, pitted, and cubed1 Tbsp. Ken's Lite Northern Italian salad dressing (you can substitute lemon juice, I just used what I had)2 tbsp. feta crumbles6 grape tomatoes, halvedred pepper flakes
Directions
Halve the avocado, pit it, and scoop out the fruit. Mash it with 1 tbsp. of the cheese and 1 tbsp of the salad dressing. Spread it on top of the bread slices. Top with remaining 1 tbsp. of cheese crumbles, the grape tomatoes, and a sprinkling of red pepper flakes.

    LOVE avocados. This is delicious. The only thing I did a little differently is add some garlic powder (about 1 tsp.) in with the avocado and cheese. Delish! - 6/14/14
