Chick Pea Curry

Ingredients
Can of chick peas - drained and rinsed2.5 medium yellow onions, chopped4 cloves garlic4 tbsp Olive Oil ground gingercurry powderturmeric1 large can of diced tomatoes1 can of full fat coconut milk (I opt for full fat since it's a healthy fat, and adds a lot more richness while avoiding butter!)
Directions
Chop onions into thumbnail size pieces, crush garlic and sautee both in the olive oil until softened. Add chick peas and spices and stir well. Add all remaining ingredients and simmer till heated through.

Serve over hot rice or couscous, or simply eat plain like a soup! Delicious next day too!
