Tex-Mex quinoa wraps

1/2 cup onions chopped400 grams lean ground beef1 3/4 cups water3/4 cups of quinoa (washed)1/2 cup shredded cheeseWhole wheat tortillas 4-6 (depending on size etc)Tex Mex spices (or other spices of your choosing(May also like sour cream or salsa on the side)Large pan/skilletRoasting tray1. Brown the meat and add the onions and a teaspoon of spice2. Throw in quinoa, tomatoes and water3. Whilst this cooks add a little more spice.4. Leave to simmer for 20 minutes5. Quinoa will absorb much of the liquid, the rest will be lost to evaporation. 6. Once it has boiled down to a thicker consistency, remove from heat.7. Ensure to have a preheated oven at 350 degrees8. Add meat and quinoa mixture to the tortillas and wrap.9. Add to a lined roasting tray and sprinkle with cheese.10. Put in oven for 10-15 minutes or until cheese melts and tortilla develops a slight crisp.11. Remove and enjoy!
