1 Whole Chicken2 LemonsSaltPepper
Rub chicken inside and out with liberal amounts of salt and fresh ground pepper. Wash lemons and poke lots of holes in lemons with toothpick. Stuff chicken with lemons and seal inside by fastening skin over opening with toothpicks.
Bake at 400, skin side down in a ceramic dish for 30 minutes. Flip chicken over and bake for another 30 minutes, or enough for 20 minutes per pound of chicken total.
