1/6 cup Extra Virgin Olive OIl1/8 cup white onion, diced1 clove garlic1/2 cup Green Mountain Medium SalsaSalt and Pepper to taste2 3oz red snapper fillets
1. In a large skillet heat oil; add onion and saute until translucent. Add garlic and cook additional minute. Add salsa and salt and pepper; cook another 5 minutes to blend flavors. Arrange snapper fillets in baking dish.
2. Pour sauce over fish. Bake at 350º for 25 to 30 minutes, or until fish can be easily flaked with a fork.
