Olive Garden - Knockoff Gnocchi Soup

Ingredients
1 tsp. olive oil2 Tablespoons butter4 Tablespoons flour1/2 cup celery1 quart of 1% milk4 cloves garlic, minced1 14-ounce can chicken broth1 cup finely chopped carrots2 chicken breasts, chopped1 package of gnocchi (Italian potato pasta)1 cup fresh, torn spinach1/2 tsp salt 1/2 tsp thyme1/2 tsp. parsley1/4 tsp. nutmegpepper, basil and oregano to taste
Directions
Saute celery and garlic in the butter and olive oil over medium heat. Add flour to make a roux.

Let butter and flour mixture cook for about a minute before adding one quart of 1% milk.

Add carrots and chicken to cook through, as well as chicken broth. Add seasonings.

At end, add gnocchi and spinach. Allow 15-20 minutes for gnocchi to cook through.

Serve!
