Low Carb Chocolate Pudding Cake for Two

Ingredients
1/4 cup almond flour1 T cocoa powder1/4 tsp. baking powderpinch salt3 T Swerve2 T coconut oil, melted1 T water1 egg1/8 tsp. vanilla extract
Directions
Mix dry ingredients in a two-cup glass measuring cup. In a small bowl, mix the egg, oil, water, and vanilla extract, and stir well. Add the egg mixture to the dry ingredients and mix well. Scrape any batter from the sides of the cup. Cover with plastic wrap and slit to vent. Microwave on high for 75 seconds. Cool slightly, cut in half, and place each half on a serving plate. Spoon pudding on top and serve.
