Lemon Muffins

Ingredients
mix all dry ingredients in one bowl and then add grated lemon peel - set asidemix together all wet ingredients well.Add wet to dry, mix together with a spatula just until moist - do not over mix or they will not rise and be too denseplace in greased muffin tins and place in ovenBake for 15-20 minutes - tops will be golden brown on top when done* If your not sure if they are done, test a muffin with a toothpick through the centre - it should come out clean*Remove from oven when done.Rest 5 minutes and remove from tins - serve warm or room temperature
Directions
pre-heat oven to 375 degrees Fahrenheit
grease 12 muffin cups
place batter in tin (about 1/3 cup)
