slow cooked ratatoulle

Ingredients
eggplant, unpeeled (#1 or #11/2)2 large yellow onions (cut in half sliced)3 or 4 zucchini(sliced)2 large Green Bell Peppers (seeded and cut into thin strips)2 large tomatoes(cut in 1/2" wedges)6 oz can of low sodium tomato paste1/2 cup extra light olive oil2 garlic cloves minced(or 1/4 tsp of garlic powder)tsp each of sugar, dried basil, black pepper, & oregano
Directions
1. put veggies in crock pot
2. then put tomato paste in
3. next add spices to the pot
4. drizzle with olive oil
5. cover and cook on low approx. 8 hours
