I used Merchant Gourmet Authentic French Puy Lentils (Ready to Eat), 100 gram(s) but you could use dried and cook them first.I used 'Infinity foods' Organic fire roasted red peppers, 82 gram(s) but again you could roast your own pepper or use any jar-bought pepper. I used approximately a whole pepper. Chop roughly.Olive Oil, 1 tbsp.*Rice wine vinegar, 1 tbsp.Ginger Root, 6 grams - gratedLime Juice, 0.5 lime yields *Lime Zest, 1 tspGarlic, 0.5 clove, crushed*Grainy mustard, 0.25 tbsp or half a teaspoon
Mix all of the ingredients in a bowl. Serve with chopped avocado and bit of crusty bread to mop up the vinaigrette.
