Coconut-Pecan Filling/frosting

12 oz. evaporated milk1 1/2 c. sugar1/4 c. butter4 egg yolks, slightly beaten1 1/2 tsp. vanilla7 oz. coconut1 1/2 c. finely chopped pecans
in a large saucepan combine milk, sugar, butter, yolks and vanilla. Cook over medium heat, stirring constantly for 12 minutes or until thickened and golden brown. Remove from heat. Stir in coconut and pecans. Cool to room temperature and to a spreading consistency. Makes about 4 1/2 cups.
